Picked up a copy of this Japanese bake book way back in 2007 at BOOKOFF for only ￥100！(usual at ￥880). Thumbing through pages after pages of gloriously photographed images of sweets of all variety — cakes, tarts, cookies, scones, muffins, truffles, puddings, compotes, French-style pastries, traditional Japanese sweets– I am always inspired to make something.
It wasn’t until some 4 years later though that I finally got down to it. The matcha pound cake was delightfully simple to make. It would be nice if they could rise a little higher. Perhaps its the result of using near-expiry baking soda? Oh well but the cakes were wonderfully crumbly and moist when eaten warm. Best with a mug of hot lemon tea.
Invest in good quality green tea powder, it makes a world of difference. Not quite a big fan of butter cakes but the the rich aroma of green tea and the intense shade of green makes this a real nice treat.
