I recently picked up a copy of Donna Hay from a newsstand and has been completely hooked! The clean and simple layout is a refreshing change from many food magazines which feel overly cluttered and tend to be laden with advertorials.
Renowned for her casual yet hip approach to cooking, the simply worded recipes require few ingredients and minimum effort but still score high on presentation and taste. Just the stuff I like.
A small non-recipe of a recipe caught my eyes. Quantities were given but it’s perfectly fine to just eyeball everything in this case.
Sweet Corn Tortillas:
Mix to combine sour cream (finished up some leftover, yay!), grated mozzarella (substituted with parmesan), baby spinach leaves (ran out of that and used chopped romaine) and cooked corn kernels. Divide mixture between 2 tortillas, fold in half and cook in frying pan over high heat for 2-3 minutes each side or until golden. Adding my own side salad and lunch was served in a jiffy.
Fuss free cooking aside, what also attracted me to DH is the style of food photography. Minimally propped and taken in natural lighting with a shallow focus, the result is pages after pages of tastefully styled and lavishly photographed works that are a feast for the eyes.
The happy news is that you don’t have to lay hands on one to know what I am talking about. This place is definitely worth a visit!
